The oil in the fryer was golden on Monday. By Thursday it is the colour of strong tea, it foams when the chips go in, and the kitchen smells a little sharp. You wonder if it can last one more day. Every cook asks this question, and getting it wrong costs money either way: too early wastes oil, too late loses customers.
Old oil costs you money in ways that are easy to miss. Chips come out darker and greasier, they soak up more oil, and customers notice the taste. Here is how to know when oil is finished and how to make it last.
What are the signs that frying oil needs changing?
- Dark colour. Fresh oil is light gold. When it looks like strong tea, it is near the end.
- Foam that does not settle. A little bubbling is normal; a thick foam on top is not.
- Smoke at 175°C. As oil breaks down, its smoke point drops. If it smokes at normal heat, change it.
- A sharp or fishy smell. Good oil smells of almost nothing.
- Sticky residue around the fryer edges and on the basket.
- Chips brown too fast but are still pale inside.
- Chips taste greasy or bitter, even when you fry at the right temperature.
How many times can you reuse frying oil?
| What you fry | Typical reuse | Why |
|---|---|---|
| Only chips (fries) | 6 to 8 times at home | Potatoes are a clean food to fry |
| Chips and chicken | 3 to 4 times | Coatings and meat juices break oil down faster |
| Fish or battered food | 1 to 2 times, then keep for fish only | Fish flavours the oil |
| Busy commercial fryer | Every 2 to 5 days | Depends on volume and daily filtering |
Many restaurant kitchens around the world use oil test strips or meters, which measure the "polar compounds" that build up as oil breaks down. Some European countries set legal limits for these in commercial fryers. You can read about how oil breaks down on Wikipedia's frying page.
How can you make frying oil last longer?
- Fry at 175°C, not hotter. Every extra degree speeds up breakdown.
- Never salt food over the fryer. Salt falling into oil makes it break down faster.
- Shake off loose ice. Frozen fries go straight into the oil, but tap the basket to drop any loose ice first.
- Strain or filter the oil every day through a fine sieve or filter cloth once it cools.
- Cover the fryer when it is not in use, to keep out light, dust and water.
- Turn the fryer down between rushes instead of leaving it at full heat.
- Keep chips and chicken in separate fryers if you can.

Ask for wholesale pricesDo frozen fries make oil go bad faster?
No. Good frozen fries are a clean product to fry: they are already washed, peeled and evenly cut, so there are no loose potato bits or excess starch from home cutting. The main thing to manage is water: keep packs sealed so ice does not build up on the fries (see how to store frozen fries). Fresh-cut chips that are not dried properly put more water and starch into the oil. Our frozen vs fresh comparison covers this in more detail.
How should you get rid of used cooking oil?
Never pour used oil down the sink or toilet. It sets in pipes and blocks drains. Let it cool, pour it into a sealed bottle or container and put it out with your rubbish. Some businesses collect used cooking oil for recycling into biodiesel or soap, so ask around in your area. For cooking oil choices, see our comparison of the best oils for frying chips.
What does a simple oil care schedule look like?
| When | What to do |
|---|---|
| Before service | Check oil level and colour; top up with a little fresh oil only if the oil is still in good condition |
| During service | Keep at 175°C; skim crumbs; turn down to about 120°C in quiet periods |
| After service | Let the oil cool, then strain or filter it and cover the fryer |
| Weekly | Drain, clean the tank with hot water and detergent, rinse and dry fully |
| When signs appear | Change the oil completely |
Write the date of each oil change on a sheet by the fryer. After a month you will know exactly how long your oil lasts, and you can plan your buying.
How do you filter frying oil properly?
- Let the oil cool to a safe, warm temperature. Never move hot oil.
- Set up a fine sieve lined with a filter cloth, coffee filter or clean muslin over a metal container.
- Pour or drain slowly through the drain valve or with a ladle.
- Wipe out the crumbs and sludge from the bottom of the fryer.
- Return the clean oil and cover it.
Daily filtering removes the burnt crumbs that speed up breakdown, so the oil lasts longer and chips taste cleaner.
Why does fryer cleaning matter for oil life?
Old, sticky residue on the tank walls and elements contains broken-down oil that mixes into fresh oil and makes it age faster. Detergent left behind after cleaning is just as bad: it makes oil foam. Clean the fryer regularly and always rinse with plenty of clean water, then dry it completely before refilling. Water left in the tank will spit violently when the oil heats.
How much does old oil really cost you?
Keeping oil too long feels like saving money, but it often costs more:
- More oil per plate: broken-down oil soaks into food more, so you use it up faster.
- Lost customers: dark, bitter or greasy chips send regulars elsewhere.
- Fire risk: old oil smokes and can catch fire at lower temperatures.
- Waste: chips that come out too dark often end up in the bin.
Our cost per plate guide shows how to work out the oil cost of each plate, and how to make fries less oily helps cut absorption.
How should you look after oil at home?
At home, a small fryer or pot of oil used two or three times a week can last a few weeks if you strain it and store it covered in a cool place. Keep a separate jar for oil used for fish. Mark the jar each time you use it, so you know when it is near its limit. If you fry rarely, consider an air fryer or oven for everyday chips and keep deep frying for special meals, so you are not throwing away oil that has sat too long.
Are oil test strips worth it?
For busy restaurants, often yes. Test strips or oil meters show how far oil has broken down, so you change it at the right time, not too early and not too late. For homes and small stands, colour, smell and foam are usually enough.
In short
Oil used only for chips can usually be reused 6 to 8 times at home, if you strain it after each use. In a busy restaurant or chips spot, oil typically needs changing every 2 to 5 days, depending on how many portions you fry and how well you filter it. Do not count uses alone: change the oil when it turns dark, foams, smokes at normal frying heat or smells sharp.
- Oil used only for chips lasts about 6 to 8 uses at home.
- Busy fryers usually need fresh oil every 2 to 5 days.
- Change oil when it darkens, foams, smokes or smells sharp.
- Filter daily and never salt over the fryer.
Frequently asked questions
How many times can you reuse oil for chips?
If you only fry chips and strain the oil after each use, about 6 to 8 times at home. Change it sooner if it goes dark, foams or smokes.
How often should a restaurant change fryer oil?
Most busy kitchens change oil every 2 to 5 days. Filter it daily and change it when it darkens, foams, smokes at 175°C or the chips taste greasy.
Is it bad to reuse cooking oil?
Reusing oil a few times is normal and safe if it is strained and stored covered. Oil that is dark, smoking or smells bad has broken down and should be thrown away.
How do you store used frying oil?
Let it cool, strain it through a fine sieve or cloth, and keep it in a clean, covered container away from light and heat.
Why does my oil foam when frying chips?
Foaming usually means the oil is old, the fryer was not rinsed properly after cleaning, or there is too much water or starch going in. Change the oil if the foam does not settle.
Should I top up old oil with new oil?
Only if the old oil is still in good condition. Adding fresh oil to dark, broken-down oil does not fix it; the old oil makes the new oil break down faster.
What temperature should I keep the fryer at between rushes?
Turn it down to about 120°C in quiet periods instead of leaving it at full heat. It recovers quickly and the oil lasts longer.
How do I know my fryer thermostat is accurate?
Check it with a cooking thermometer. If the oil reads very different from the setting, have the thermostat repaired or replaced.
