Plain salted chips are good. But have you noticed how some chips spots have a queue while the one next door is empty, even though they sell the same thing? Often the difference is a small jar next to the fryer: a seasoning that people remember. You can make that magic at home with spices you already have.

Plain salt is classic, but a good seasoning turns chips into something people remember. Each recipe below makes enough for about 1 kg of fries. Mix a jar and keep it by the stove.

How do you get seasoning to stick to fries?

8 seasoning mixes for fries

1. Masala chips seasoning

2 tsp curry powder or garam masala, 1 tsp paprika, ½ tsp turmeric, ½ tsp chilli powder, 1 tsp salt. Toss, then add a squeeze of lemon. For saucy masala chips cooked in tomato and spices, see our easy meals with frozen fries.

2. Pilipili and lime

1 tsp chilli powder (pilipili), 1 tsp salt, zest of 1 lime. Squeeze lime juice over just before eating. Fresh, hot and very Tanzanian.

3. Garlic and herb

1 tsp garlic powder, 1 tsp dried mixed herbs or oregano, ½ tsp black pepper, 1 tsp salt. Add chopped fresh dhania (coriander) on top.

4. Peri-peri

1 tsp paprika, 1 tsp chilli powder, ½ tsp garlic powder, ½ tsp onion powder, ½ tsp dried oregano, 1 tsp salt, pinch of sugar. Great with grilled chicken.

5. Cheesy fries

3 tbsp finely grated hard cheese (or cheese powder), ½ tsp garlic powder, pinch of salt. Toss while very hot so the cheese melts slightly.

6. Smoky BBQ

2 tsp smoked paprika, 1 tsp brown sugar, ½ tsp garlic powder, ½ tsp onion powder, ½ tsp cumin, 1 tsp salt.

7. Black pepper and lemon

1 tsp coarse black pepper, zest of 1 lemon, 1 tsp salt. Simple and good with fish.

8. Cumin and coriander (bizari)

1 tsp ground cumin (jira), 1 tsp ground coriander, ½ tsp chilli, 1 tsp salt. Warm and earthy, lovely with mishkaki.

How much salt should you put on fries?

About ¼ to ½ teaspoon of salt per 250 g portion is enough for most people. If your seasoning mix already contains salt, do not add more. The World Health Organization recommends adults eat less than 5 g of salt a day in total, so spice-based mixes like garlic and herb or pilipili and lime are a good way to add flavour with less salt.

Can restaurants use seasoning to sell more chips?

Yes. A "seasoned chips" option at a small extra charge is one of the cheapest upgrades on a menu. Offer two or three house seasonings, put them on the menu with photos, and train staff to ask "Plain or masala?" Our guide to selling more chips has more ideas, and our dipping sauces guide pairs well with these mixes.

How do you make a big jar of seasoning?

Multiply any recipe by 5 or 10 and mix it in a clean, dry jar with a tight lid. Shake well before each use, because heavier salt sinks to the bottom. A mixed seasoning keeps for 3 to 6 months in a cool, dark cupboard. Keep it away from the stove, because steam makes it clump. Do not put lemon or lime zest in a jar you plan to keep; add it fresh each time.

How do you create your own house seasoning?

Most good fries seasonings combine four parts. Pick one or two from each line and test small amounts until you love it.

PartOptionsShare of the mix
SaltFine salt, garlic saltAbout a third
Base flavourPaprika, garlic powder, onion powder, curry powderAbout a third

Write down the exact amounts when you find a mix you like. Consistency is what turns a seasoning into a signature that customers ask for by name.

Which seasoning goes with which meal?

Can you use fresh herbs and garlic?

Yes, but add them differently. Fresh garlic burns in hot oil and turns bitter, so do not fry it with the chips. Instead, warm a spoon of oil with crushed garlic in a small pan for 30 seconds, take it off the heat, and toss with the cooked fries. Chop fresh dhania, parsley or spring onion and scatter it on top just before serving. Fresh herbs wilt quickly on hot fries, which is fine for eating straight away but not for takeaway.

How do you season air fryer and oven fries?

Because air fryer and oven fries have less oil on the surface, seasoning needs a little help to stick. Toss the frozen fries in about 1 teaspoon of oil per 500 g before cooking, add dry spices (not salt) halfway through, and salt right at the end. Sugar-based mixes like BBQ can burn in the air fryer, so add those in the last 2 minutes. More on cooking methods in air fryer vs deep fryer, and for perfect crisp results before you season, see how to make crispy chips.

Can fries be sweet?

Yes, especially sweet potato fries. Toss them in a little cinnamon and sugar for a dessert-style snack. Potato fries can also be served with a sweet chilli or honey-mustard dip for a sweet and savoury contrast. See sweet potato vs regular fries.

What are common seasoning mistakes?

Which local spices work best on fries?

Tanzania has a long history with spices, especially along the coast and in Zanzibar, once famous as a spice island. Many of those spices work beautifully on fries: ground cumin (jira) and coriander for warmth, black pepper for bite, cardamom and cinnamon for sweet potato fries, turmeric for colour, and chilli for heat. A small pinch of ground clove in a masala mix adds a Zanzibar touch, but use it sparingly; it is strong. Buy whole spices and grind them yourself for the freshest flavour. In short

The best time to season fries is in the first 30 seconds after they come out of the oil, while they are hot and slightly glossy, so the seasoning sticks. Toss them in a big bowl with about 1 teaspoon of seasoning mix per 250 g portion. Our favourite mixes: masala, pilipili and lime, garlic and herb, and peri-peri.

Frequently asked questions

When should you season fries?

Straight after frying, within about 30 seconds, while the fries are hot and slightly oily. That is when seasoning sticks best.

Should you season fries before or after cooking?

After. Seasoning before deep frying burns and falls into the oil. For air fryer or oven fries, you can toss them with oil and seasoning before cooking, but salt is still best added after.

What is masala chips seasoning made of?

Usually curry powder or garam masala, paprika, turmeric, chilli and salt, often finished with lemon juice. Some recipes cook the chips in a spiced tomato sauce.

How do you make seasoning stick to air fryer fries?

Toss the fries in about a teaspoon of oil, then add the seasoning. The oil helps it cling.

How long does homemade fries seasoning last?

About 3 to 6 months in a clean, dry, tightly closed jar kept in a cool, dark cupboard.

Can I use fresh garlic on fries?

Yes, but not in the fryer, where it burns. Warm crushed garlic in a little oil off the heat, then toss with the cooked fries.

What seasoning goes best with chips kuku?

Peri-peri or garlic and herb seasoning both go very well with fried or grilled chicken.

Can I use Zanzibar spices on fries?

Yes. Cumin, coriander, black pepper, turmeric and chilli work well, and a tiny pinch of clove adds a Zanzibar touch to a masala mix.
