The executive chef at a beach hotel north of Dar had a problem that guests kept writing about in reviews: "Great food, but the fries at the pool were soggy." The kitchen cut fresh chips every morning from whatever potatoes the market had. Some days they were good. Some days they browned too fast or went limp in ten minutes. When the hotel switched to one consistent frozen fry and changed how it was cooked and held, the comments stopped within a month.

The best frozen fries for hotels in Tanzania are a medium straight cut of around 10 to 12 mm, made from good frying potatoes, that cook from frozen in about 3 minutes and hold their crunch for longer than thin fries. Supply matters as much as the fry itself: a hotel needs the same product every week, delivered frozen, in pack sizes that fit its freezers. Here is how to choose, cook and serve fries across every outlet in a hotel.

Why do hotels need a different approach to fries?

A restaurant serves fries from one kitchen to one dining room. A hotel serves them in many places at once: the breakfast and lunch buffet, the à la carte restaurant, room service, the pool bar, conference lunches and weddings. Each outlet has different timing, distance and holding needs. A fry that is perfect at the pass can be soft by the time it reaches room 412. Hotels also serve international guests who know what good fries taste like and say so in reviews.

What should a hotel look for in frozen fries?

Our checklist on choosing frozen fries for restaurants applies to hotel kitchens too, and the label guide shows what to check on each pack.

How do you keep fries crisp on a buffet?

Buffets are the hardest place to serve fries well, because food sits. A few rules make a big difference:

  1. Fry small batches often. Refill every 10 to 15 minutes with a fresh half pan rather than one big tray every hour.
  2. Use shallow, open pans. Deep hotel pans trap steam. Spread fries no more than two or three layers deep.
  3. Never cover fries. A lid turns crisp fries soft in minutes. Use a heat lamp or a dry heated well, never a water bath with a lid.
  4. Salt in the kitchen, lightly. Salt draws out moisture, so heavy salting on the line makes fries limp faster.
  5. Throw out tired fries. A tray older than about 20 minutes under heat should be replaced, not topped up.

Place the fries near the end of the line, close to the grilled meats and burgers, so guests take them last and eat them hot. Our post on keeping chips consistent covers batch sizes and oil temperatures in detail.

How do you make room service fries arrive crisp?

Room service is a short delivery trip, and the same rules apply as for takeaway. Fry the fries last, when the rest of the order is plated. Serve them in a separate dish, never under a metal cloche with the main course, because the cloche traps steam. A small paper-lined basket or an open ramekin on the tray works well. If your trays travel more than a few minutes, cook the fries a little longer for extra crunch. Our guide on keeping fries crispy for delivery explains why steam is the enemy.

What about the pool bar and snack menus?

Pool bars sell more fries per guest than any other outlet, often with drinks in the afternoon. If the pool bar has its own small fryer, keep a working stock of frozen fries in a freezer right beside it so staff never walk to the main kitchen. Offer two or three simple options: plain fries, seasoned fries and loaded fries. Our fries seasoning ideas and peri peri fries recipe are easy to batch for a bar.

How much fries does a hotel need?

OutletPortion (cooked)Planning tip
Lunch or dinner buffet80 to 120 g per guestGuests take smaller amounts when there is a lot of choice
À la carte side150 to 200 gUse a marked scoop for every plate
Room service150 to 180 gServe in a separate open dish
Pool bar snack200 to 250 gOften shared, so offer a large size
Kids' menu100 to 120 gSmaller portion, less salt

Multiply by expected covers per outlet per day, add 10 to 15 percent, and convert to 2 kg packs. Our portion guide and stock planning system show how to turn this into a weekly order.

How should hotels store frozen fries?

Keep the main stock in the central freezer at -18°C or colder, and give each outlet a small working stock for one or two shifts. Rotate first in, first out, write delivery dates on cartons, and check deliveries at the door. Our receiving checklist shows what to look for. Plan for power cuts too: a generator that covers the freezers protects thousands of shillings of stock.

How do you serve fries at conferences and weddings?

For events, plan by headcount and serving style. Plated meals are easy to control. Buffets and cocktail receptions need more fryer capacity at the peak, so prepare by cooking in waves and staggering service. Paper cones of fries work well as a late-night snack at weddings. Our guide to fries for weddings and events has quantities for different guest numbers.

What should a hotel ask a frozen fries supplier?

Tourism is one of Tanzania's biggest industries, and the Tanzania Tourist Board and the growth in visitors to Zanzibar, Arusha and the coast keep hotel kitchens busy all year. A supplier that understands hotel volumes and seasons is worth more than one that is slightly cheaper. See our list of what to check in frozen fries suppliers.

The beach hotel kept one more change after fixing the pool fries: every outlet now uses the same scoop and the same fry. "Guests notice when things are the same," the chef says. "They only write about it when they are not."

In short

The best frozen fries for hotels in Tanzania are a 10 to 12 mm straight cut from good frying potatoes, with a short ingredients list and reliable local supply in pack sizes that fit each outlet. On buffets, fry small batches every 10 to 15 minutes in shallow open pans and never cover them. For room service, fry last and serve in a separate open dish. Give the pool bar its own working stock, plan portions by outlet, store at -18°C with first in, first out rotation, and choose a supplier that delivers frozen on fixed days.
